Recipe: Burgers w/ Balsamic Grilled Onions and Basil

I have some OCD tendencies, and sometimes they serve me well in the kitchen. For example, I tend to get all feng shui about what elements go with what. If I’m serving an Asian-inspired main, then chances are, everything else—the salad, the side, the dessert, the drinks—will complement the theme. This burger build is a case in point. The spices in the burger go well with the mozzarella (optional, of course), which snuggles up to the basil, which is all a foundation for some seriously gorgeous grilled onions.

If you have time, marinate the onions for as long as possible. They’ll only get better and better.

Burgers w/ Balsamic Grilled Onions and Basil

1 large or 2 small sweet onions (Walla Walla, Vidalia, etc.), sliced into 1/2-inch thick rings

1/2 cup balsamic vinegar

2 lbs. ground bison or beef

1 Tbsp. dried oregano

2 tsp. garlic powder

2 tsp. each kosher salt and fresh ground pepper

olive oil, for brushing

handful of fresh, whole basil leaves

4 slices of fresh mozzarella cheese (optional)

lettuce, for serving

1) Place onion slices in a rimmed dish big enough so the slices can lay flat. Pour vinegar over the cut sides, and salt and pepper them if desired. Set aside.

2) Preheat grill. Add ground meat, oregano, garlic powder, and S&P to a large bowl. Mix thoroughly with hands.

3) When grill is ready, brush onions and burgers with olive oil. Grill both over medium-high heat for 3-4 minutes, or when good grillmarks appear. Flip and grill another 3-4 minutes, or until desired doneness. If adding mozzarella, put a slice on each burger for the last 30 seconds of grilling with the lid closed.

4) To serve, place a burger on a bed of lettuce, top with basil and rings of grilled onions.

Serves 4.
